In this Tips & Tricks page, we’ll take you through the ins and outs of using dry milk powder from rehydrating it for a glass of milk to using it as a dry ingredient.
What is Milk Powder and How is it Made?
Milk powder is exactly what it sounds like: milk that has been evaporated into a powdered state. Similarly to regular store-bought milk, powdered milk comes in a wide variety of types and options! That includes traditional dairy milks like Whole Milk Powder and dairy-free options like Oat Milk Powder.
So how are milk powders made? All of Hoosier Hill Farm’s milk powders are made using a process called spray-drying which uses hot air to rapidly evaporate the water particles in the liquid milk, turning it into a powder.
Different Types of Milk Powders and How to Use Them
Buttermilk Powder
For one cup of liquid buttermilk, mix 3 Tbsp Buttermilk Powder to 7.5 oz. water.
For use in baking: First mix the Buttermilk Powder with the other dry ingredients. Then add the appropriate amount of water when the recipe calls for buttermilk.
Goat Milk Powder
For one cup of liquid goat milk, mix ¼ cup of Goat Milk Powder to 1 cup of warm water.
Heavy Cream Powder
For one cup of liquid heavy cream, mix 6 tbsp of Heavy Cream Powder and 1 cup of water.
For Best Results: Let the mix sit overnight in the refrigerator before using.
Instant Nonfat Dry Milk
To make one quart of nonfat milk, mix 3 3/4 cups of cold water with 1 cup Instant Nonfat Dry Milk Powder. Stir to combine, then drink right away or use in any recipe calling for liquid milk. We recommend using a glass container to mix your instant milk if available. Liquid milk made with instant milk powder will keep in the refrigerator for 5-7 days after mixing when covered tightly.
For a glass of nonfat milk, mix ¼ cup of Instant Nonfat Dry Milk Powder and 1 cup of water.
Oat Milk Powder
To make 1 quart of liquid oat milk, combine 1 & 1/4 cups of Oat Milk Powder with 3 & 1/2 cups of room temperature water. For a smooth and creamy consistency, we recommend blending the oat milk for 15-30 seconds using either a traditional blender, an immersion blender, or a hand mixer.
For the best consistency, chill the blended oat milk overnight before using. When camping or traveling, liquid oat milk can also be blended by adding the ingredients to a tightly sealed container and shaking vigorously.
Whole Milk Powder
To make one gallon of whole milk, mix 4 1/2 cups of Whole Milk Powder with 14 1/2 cups of warm water. We recommend using a whisk, milk frother, or hand mixer for a smooth and creamy consistency every time. Cover and refrigerate mix overnight before using for best results.
Please note that this is not an instant product. To make one cup, mix ⅓ cup of Whole Milk Powder and 1 cup of warm water.

Storing
Storing Powder
Store powder in a cool, dry place to prolong shelf life. We do not recommend refrigerating or freezing dairy powders.
If it is unopened, sealed, and stored properly, the product should last 2 to 3 years.
While our powdered milk products are safe to use for up to a year after being opened, we recommend using within the first 90 days following opening for optimal quality, texture, and taste.
Storing Liquid Made From Milk Powders
We recommend using a made batch of our milk products as soon as possible; however if it is stored in an airtight container and in the refrigerator, it should last 3-5 days.
