Mini Cheesecakes


Ingredients

  • Mix 3 Tbsp Hoosier Hill Farm Sour Cream Powder with 1.5 Tbsp of water to make 1/4 cup sour cream
  • 8 oz. cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 egg

Instructions

Step one: Preheat the oven to 350°F and prepare a muffin pan with liners or non-stick spray.

Step two: Combine all of the ingredients for the crust in a medium mixing bowl. Press a tablespoon into each liner and bake for 5 minutes.

Step three: Using a handheld or stand mixer, combine the prepared sour cream, cream cheese, sugar, vanilla, egg, and lemon juice. Divide the batter between each of the lined and pre-baked crusts.

Step four: Bake for 18 to 20 minutes or until the edges are set.

Step five: Allow the cheesecakes to cool at room temperature for 30 minutes prior to transferring them to the fridge to chill for at least 3 hours.

Step six: Serve with whipped cream and your favorite toppings. Enjoy!
