Ingredients
- Hoosier Hill Farm Pretzel Salt
- 1 cup milk
- 1 packet dry active yeast
- 3 Tbsp brown sugar
- 1 ¼ tsp salt
- 3 cups of flour
- ½ cup baking soda (for baking soda bath)
- 9 cups water
- 1 egg, whisked
- 2 Tbsp butter

Step one: Heat milk and 2 Tbsp of butter in the microwave until the butter is melted. Stir in brown sugar until dissolved.
Step two: In your stand mixer’s combine yeast, flour, and salt (NOT the pretzel salt). Slowly add in the milk mixture and continue to mix with your paddle attachment until a dough forms. Follow with around 5 minutes of kneading either by hand or with the dough hook attachment.
Step three: Shape your dough into a ball and place into a bowl. Cover with wrap and allow to rise until doubled in size or for at least an hour.
Step four: Preheat the oven to 450F and prep a baking sheet.
Step five: Bring 9 cups of water and baking soda to a boil in a small saucepan.
Step six: Punch your dough to deflate it and turn out onto a clean surface. Shape dough into a log and cut into 6 equal pieces. Roll each piece into a 24” rope.
Step seven: Dip each of your 6 ropes into the baking soda solution and allow excess liquid to drip off. Form your rope into a pretzel shape immediately after dipping.
Step eight: Brush each pretzel with the whisked egg and top with Pretzel Salt. Bake for 8-10 minutes or until golden.
