Ingredients
For the Bread:
1 ½ cup flour
1 tsp baking soda
¼ tsp baking powder
2 tsp pumpkin pie spice
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
⅓ cup Hoosier Hill Farm Whole Milk Powder
1 can pumpkin
¾ cup melted coconut oil
¾ cup maple syrup
1 tsp vanilla
½ cup sugar
¼ cup brown sugar
2 eggs
For the Cinnamon Sugar:
½ cup sugar
2 tsp cinnamon
Instructions
Step one: Preheat the oven to 350 degrees and lightly grease 1 bread pan. Line the pan with a thin piece of parchment (leaving two flaps at the top). This will make it easier to get the bread out of the pan when done!
Step two: Beat eggs together in a large bowl. Add pumpkin, coconut oil, maple syrup, vanilla and both sugars to the bowl. Mix until well combined.
Step three: In a separate bowl, whisk together all of the dry ingredients.
Step four: Gradually add the dry mixture to the pumpkin mixture, making sure each bit is blended before adding more. Once well combined, pour half of the pumpkin mixture into the bread pan.
Step five: Mix together the cinnamon sugar and sprinkle it on top of the pumpkin layer. Pour the remaining pumpkin mixture on top of the cinnamon sugar and sprinkle again with more cinnamon sugar. Use a knife or spatula to create swirls in the top of the bread until you are satisfied with how it looks.
Step six: Bake the bread in the oven for 55-60 minutes, a toothpick/knife should come out clean once the bread is done. Allow to cool in the pan before removing.
Step seven: Slice the bread up and enjoy! Spread butter and add pecans to make this bread extra delicious.
